Temperini Coast to Coast

Fresh from his December residence at Paris’ exclusive Le Royal Monceau – Raffles Paris, Le Sirenuse’s executive chef, Matteo Temperini, is bringing his light Mediterranean touch to Southern California’s premier sand-between-the-toes retreat Shutters on the Beach from 19 to 26 February.

The Michelin-starred Temperini will be pairing up with the Santa Monica resort’s managing chef, Sven Mede, to offer a four-hander menu designed to distil the best of two great culinary climes. The sun-blessed haven of the Amalfi Coast seems designed to furnish a chef with delicious, healthy ingredients, from an abundance of seafood to sweet sfuso amalfitano lemons, herbs, capsicums, apricots, walnuts and almonds, tomatoes of every variety, not to mention Gragnano pasta and some of Italy’s most prized artisanal salumi and cheeses. Mede replies with fresh, organic Californian dishes that blend sea and sierra, European and Asian influences in bold, sunrise-fresh dishes like mustard-marinated black cod with caramelized sunchokes, Brussels sprouts and pancetta.

Among the creations that Temperini will be bringing to the iconic California hotel, Gragnano spaghetti with ‘piennolo’ tomatoes and Castell’in Villa olive oil makes a virtue of simplicity, exalting the flavours of its three perfect ingredients in a gourmet homage to mamma’s home cooking. In a main course like breaded, line-caught sea bass with Salina capers, ginger, garlic, caramelised tomatoes and Mediterranean herbs, Le Sirenuse’s chef distils the spirit of Positano, dolce vita but genuine at the same time, with just that touch of ginger hinting at this small Amalfi Coast town’s international outreach.

Temperini will not be the only Sirenuse guest to surf into Shutters this February. The Emporio Sirenuse – a curated fashion and lifestyle boutique and website run by Le Sirenuse’s Carla Sersale – will open its own pop-up shop inside the Santa Monica resort, presenting some of the lines that have made it such a point of reference for globetrotting Amalfi Coast aficionados. Among items exclusive to the Emporio that will be on sale at Shutters are Allegra Hicks’ Sirenuse-motif bathing trunks for men, and a set of strikingly chic throw pillows inspired by the patterns on antique suzani textiles from Central Asia and quilts from Rajasthan. Le Sirenuse's heady signature scent, Eau d’Italie, will be breezing in, together with its sister bath and beauty range. Look out also for a selection of one of Carla’s favourite tableware discoveries: the jazzy yet elegant ‘Bora’ tumblers made by historic Murano glass firm Carlo Moretti.
